With 40 years of extensive experience the Tempo On Wheels team brings together decades of expertise, authentic techniques and 3 generations of passion for quality ingredients starting from handpicking ingredients from Nonno’s garden.

Our A.V.P.N. Qualified Pizzaioli have worked all over the world (including Italy, Argentina, Colombia, Greece and Nepal) working as a pizza consultant and doing intensive cooking apprenticeships. we deliver professional service, delicious wood-fired pizza and wholesome energy to every event.

About Tempo On Wheels

Domenico Colosimo is an Italian-Australian third generational Pizzaiolo, running
Tempo • Pizza • Bar • Gelato with ​p​arents Pietro and Cecilia. ​T​empo has been around since 198​7​, ​recently celebrat​ing 10 years​ ​o​f service to our homey ​Northcote ​c​ommunity.

Domenico is also the founder of Tempo on Wheels, a mobile venture dedicated to bringing authentic Pizza Napoletana directly to​ you, in a convenient fashion.

Domenico’s journey began at just 11 years old, cooking alongside his Nonno Domenico and six ​Nonne on New Year’s Eve 2010 at the San Marco in Lamis Club in Carlton.

From there, he trained under his father, Pietro Minniti (ranked third best pizzaiolo in Australia in 2014) who was working across the family’s establishments including Café Andiamo (Degraves Street), Pizza e Birra (St Kilda) and Tempo Northcote.

Throughout 2018, 2019, 2022 and 2025, Domenico refined his craft in Napoli, training beside masters such as Vincenzo Capuano (World Champion of Contemporary Pizza 2021 & 2022), Salvatore De Rinaldi (A.V.P.N. World Champion 2021).

Domenico also worked at the historic Pizzeria Da Attilio (est. 1938), renowned for its traditional Verace pizzas and distinctive eight-pointed star pizza creation.

These experiences in the motherland shaped his philosophy: honouring tradition, mastering fermentation and developing his own authentic delicious pizza.

Domenico was ranked among Australia’s best Pizzaioli at Australia’s Best Pizza Awards 2025. 
His acclaimed ‘Sette Bello Organic Fig Pizza’ reflects his commitment to gardening and family tradition. Domenico was Associazione Verace Pizza Napoletana (AVPN) certified in 2022 and internationally experienced — with restaurant consultancy and hospitality roles spanningItaly, Greece, Brazil, Peru, Argentina, Colombia & Nepal!

Domenico has not only built a trusted reputation within the Northcote community but in many countries and continents all over the world!

Through Tempo on Wheels, Domenico brings theatre to the art of pizza: acrobatics, interactive workshops for children, and an energy that turns every service into a unique wholesome experience. His creative work extends into acting and performance, blending culinary skill with stage presence.

Rooted in family, driven by craftsmanship and fuelled by community, Domenico continues to carry forward his Nonno’s legacy — climbing the 60-year-old fig trees each season, still listening, still learning, and shaping the future of Pizza Napoletana in my own Contemporary way.
